I planted a small garden this year.
Tomatoes, green beans, Brussels sprouts, peppers, lettuces, herbs, kale, zucchini, watermelons, cantaloupes and cucumbers.
Watermelons? zip, nada, zilch. Same with the cantaloupes. Oh, lots and lots of blossoms, but no fruit. well, that's just an outright lie. I DID get a few watermelons, that weren't even worth talking about.
Green beans were BOOMING! same with the tomatoes. Especially the grape tomatoes. I roasted a butt lord of them but that's for another post. So what did I make? why, fresh salsa, of course!
I just took a handful of ripe tomatoes, washed them....
sliced them, then chopped up the slices. Not too fine a chop, since I like my salsa chunky, but you can make the pieces as big or as small as you like them.
So, I had half of a purple onion left over from something else, so I chopped that up, and added it to the tomatoes. I looked at it...meh...didn't seem like enough onion to me, so I added a small white onion, chopped.
Then I took a big jalapeno, and took the seeds and ribs out of it. I wanted spice but not too much HOT, ya know?
and I am a lime girl. Lemon has it's place, but I LOVE me some lime! So I took two small limes and squeezed them right into the tomato mixture, along with a small bunch of cilantro, stems and all. But I like my cilantro finely chopped, so I chopped the heck out of those suckers. a little salt and pepper, and we were good to go!
This is the end product. I tasted it...needed more cilantro, which I didn't have. So I went without. But I DID add another small lime, and a little more salt. Now this will get JUICY. you will have a lot of juice in the bottom of the bowl in no time. I could have seeded the tomatoes and gotten some of the juice out, but hell, IM LAZY AND DIDN"T FEEL LIKE IT! So I got a slotted spoon and spooned it all out into another bowl. I know I know...more dishes to wash. But I didn't care. IT WAS YUMMY!!!
